Recipe: Pumpkin and ginger cream soup for after training

There's nothing like coming home after a long day and finding a warm, comforting dish. This cream is perfect for recover energy and at the same time give the body quality nutrients.

Ingredients (4 servings):

  • 500g of pumpkin.

  • 1 onion.

  • 1 small piece of fresh ginger.

  • 1 medium potato.

  • 1 tablespoon of olive oil.

  • Salt and pepper to taste.

Preparation:

  1. Fry the onion in oil.

  2. Add the pumpkin and potato in pieces, cover with water.

  3. Boil for 15 minutes and add the ginger.

  4. Blend everything until you get a smooth cream.

Tip: Top it with toasted pumpkin seeds. They add protein and a crunchy touch.
